New Year's Day

Today was a great day!  We slept in a little, I made strawberry muffins for breakfast, and then made a cherry cobbler to take to my mom's.   I ran out of vanilla and used almond extract so I really didn't know how it would taste.  Turned out very yummy!  The only problem was that the cherries had a lot of pits still in them.    We just had a small get together today - my brother, mom,  my niece, and the five of us.  My brother brought a precooked brisket and made the black-eyed peas, Mom made the mashed potatoes, and I made the salad, butter noodles, and the cobbler.  Then we just relaxed.  Dh and brother watched football, Mom and I took a nap, and the kids OD'd on t.v. - Hannah Montana, I think.  We don't have cable at home so when we go to Mom's they head to the back room to watch the Disney Channel and we don't see them except when they want to eat, lol!  I try to limit their television watching as much as possible at home, so they really take advantage when we go to Mom's. 

 

Below is the recipe I used for the cobbler - you can substitute any fruit you like.  I normally make peach cobbler, but hubby LOVES cherries, so I made it just for him. 

 

Easy Fruit Cobbler

 

1 stick of butter

2 cans of cherry pie filling

1 C flour

1 C Rapadura (or sugar)

1 1/2 tsp baking powder

Dash of salt

2/3 C milk

1 tsp vanilla (I used almond extract this time)

 

Melt butter and place in the bottom of the baking pan.  Pour in cherries or other fruit.  (When making peach cobbler, sprinkle fruit with nutmeg.)  Mix rest of ingredients together and pour over fruit.  Sprinkle with 1/4 to 1/2 Cup Rapadura.  Bake at 350 degrees for 40 minutes.

Hi. I can sure relate to you on the TV thing. That's the way our kids were at my Mom's house - she had cable and that's where the kids were. These days I have to severely limit their computer time - it can really take over if I don't watch it.
