Recipes and Catch Up


Well, we are back from housesitting for the Bremer's.  It didn't seem like house sitting since that's where I grew up.  It was more a long vacation back home.  This is the view from the back porch.  Ahhh!!!


Here is a picture of our last camping trip where it rained the whole time.   This is me with IttyBitty and our dog Max. 


I dried some banana slices is my dehydrator.  The girls love banana chips!

And finally....  Grilled veggie Pajitas (pita-fajitas)

Sautee any veggies until soft.

Stuff them inside a pita bread and sprinkle with some grated cheese.

Grill.  (I use my indoor grill)

Mmmm.  Delicious!

much ado about nothing


Yesterday was an awesome lazy day! I dusted and cleaned the bathrooms and made chicken stock and was lazy.;)

Today tho......... I need to get moving. I've mopped, worked out and vacuumed. The frig is in decent shape and the only load should be done soon so I can hang it out. Then I can shower nad hopefully Joey will have school done by then. He's been drawing things out lately.......... This afternoon, Mat's getting a haircut. I wasn't thinking about it, but it looks bad and I'm sure DH will want it looking halfway decent for the party. We're also doing our last free bowling and I need to stop by the bulk food store and get a couple of things for us and one for pgSIL. I should also come up w/a bday gift for her almost 1yo. I need to ransack the basement and see what we've got in the gift stash. I can toss in some finger/baby foods, too.

Pics from this weekend


I was asked about our land.  It is 1 acre and we currently have no neighbors.  However, a young couple bought the corner lot the same day we bought ours.  They were out there clearing land this weekend as well.  There is one lot between ours.  So, they have the corner, then there is 1/2 acre of woods, then us.  I don't think it'll be too bad.  We'd really like to hunt down the woman that owns that lot between us and buy it too....that way we can be sure it stays vacant.  :)  But that is in the future.

Our Schoolhouse Opened It's Doors

Of course, as a homeschooling family, we are always learning, but we started our year today, officially. I just can't believe that it's time again, but I have been looking forward to schedules and the slow down that the school year brings. Funny, we have a very full year and it's always busy, but I guess compared to tending an acre of berries, three gardens and a pumpkin patch, it seems like a piece of cake! We are all signed up for classes with our local co-op: Spanish, drama, art, music, photography, soccer, "real money," and workforce etiquette.  There will also be Apologia science labs and gym class. We'll have occasional fieldtrips, including the zoo, a real castle (studying The Middle Ages), and the firehouse where my husband gives a fire safety class. The greatest blessing will be those sunny days where we can study in our classroom under the trees. I am really looking forward to our year of learning together.

Stopping and starting again with school


Well, I tried to start school along with our public school system.  The bad thing is that our scheduled homeschool activities, bible studies, etc. don't start until after Labor Day.  SO..... I have to decided to save my sanity and put off "school" until after Labor Day.  I don't do well if I don't have a schedule, so everything should start to fall in place (as far as schedules go) after that.  I feel so much better since making just that one decision.  With just the two weeks that we have done so far, however, I have really found myself struggling in the area of history.  The problem is that when I go through the history "stuff" and the time periods that are given, I keep wondering if that is supported biblically.  Now I can tell you right off the bat that I don't have any idea, but some ancient civilizations seemed to be a little older than I have thought that the bible indicates.  Maybe it is not a big deal, but the more that I consider that I want my children's education to be biblically centered, it is becoming more of a big deal to ME.  Also, for my own understanding.  So I think that I will be looking for a history curriculum that ties in the bible.  Any suggestions?  I realize that in the meantime I can just talk about the civilizations without even tying the years with it, but I still want to know.  In other words, I'm not freaking out or anything - just thinking maybe there's something better out there.  Also, our ladies group at church is starting a new Precept study called Covenant.  I don't know who might be familiar with Precept Ministries, but they teach a method of bible study called inductive bible study.  This particular one is supposed to be just life-changing, so I would really like to be involved in this.  The problem is that my daughter is supposed to be starting a music class that will take place at the same time and at a different location.  Not really sure what the plan is going to be with that.  Waiting to see.  Wow, I'm rambling.  Must be the caffeine in the sweet tea (one of the more wonderful things about the South!!!).  Well, I suppose I'll retire and spend some time with the hubby!

Homeschool Memoir- Week 2- Agendas


Goodness, when I think about our homeschool plans, I have an ideal, perfect picture in my mind of getting up early every morning, getting into our lessons by 9am and having a full day of perfectly timed, perfectly run, good obedient robotic children who smile and say, "yes Mummy, of course Mummy, three bags full, Mummy" all day long until 3pm when I let them out.

I don't really desire this - well, not anymore that is. I have had a perfectionists mindset in the early days of my homeschooling, but I think I'm starting to get out of that now - more out of necessity than anything else. We've kind of been doing unschooling these past two terms while I got over the morning sickness, and now this term while I try and get my iron levels up to a range where I actually feel like turning the page of a book.

The New Zealand school year has 4 terms in a year. Each one broken into approximately 10 weeks, with 2 weeks of holiday in between. At Christmas time, we have around 6-8 weeks of holiday. This is the peak time of our summer. So our school year generally starts with the new year or shortly thereafter.

I have big plans for 2009. Our baby is due mid January, so we'll all be on holiday which is quite good timing really. I am going to drop most of the children's extra-curricular activities for term one while we settle in with the new baby. This will mean dropping French and Art, but we'll keep up my daughter's ballet lessons on Saturday and my son's tennis coaching - also on Saturday. We'll pick French and Art up again in Term 2.

Meredith (6) has ballet every week and Hugh (8) has tennis coaching. We'll keep these up  next year probably.

Currently, Meredith is doing Abeka Math and Phonics. She is really thriving on this, and I find it easy to run - not too complicated to set this up. She started with 100 Easy Lessons and then graduated to Abeka. I will probably do this with all my other children as well. What I love about Abeka is that it is colourful and attractive, has lots of games, songs and interesting pictorial activities. It really appeals to my 6 year old daughter.

I tried the Sonlight phonics with Hugh at one stage, but I really don't like their books or method. A lot of the readers have American slang and Hugh found it hard to understand.

So Meredith does Abeka for math and reading, and we do Sonlight for Science (I love their Science programme), and history, geography and read-alouds.

Hugh (8), has had a mixed year with his curriculum. We're still finding our feet with him. I made a lot of mistakes with his curriculum in the first years (my first child to homeschool), so I feel as though I'm still catching up. We hope to have a fresh start next year. He does Saxon math. I had my doubts about how well he was doing on this and was considering changing to Abeka, but I had him assessed through an independant teacher, and we found that he is actually has a math level of a 9 or 10 year old, so we will stick with Saxon!

I have tried many different spelling/grammar programmes, but I am finding Easy Grammar the best one so far. 

We love our Sonlight. We ordered it early this year, and I'm having to fight off the children from dragging the books off the shelf. They are keen to get into them. Their science programme is fantastic. My children love it and are learning so much. It's very hands on, lots of experiments for them. We even grew radish seeds this year. We're about to start on corn seeds.

Even though we're going into our fifth year, I still feel as though I'm finding my way with the homeschooling, but I am a lot more relaxed about it and more confident than I was when we first began. My goals for the next school year are to establish firm routines, have good structured learning time and really just put our heads down and have a good year. I know that life happens and unexpected things occur, but I hope we can have a more settled year next year.

What can you do on little?


Hmmm...loaded question, I know.

What do I mean -- little land? little food? little money?

All of the above, I guess.

Say you have 2 acres of land, good zoning (meaning you can have animals and do what you wish). On this 2 acre patch you are wanting to set up homesteading. Maybe raise a beef cow or two, have a couple of hogs for processing, certainly chickens and maybe even a handful of rabbits.

You want room for the children and for family entertaining, of course. And there are 7 children in the mix.

So...how do you do it? Can you do it? Will it work?

Here's my thoughts...and they are not overly complete by any stretch...do chime in and give me ideas and share your experience!

Well, 2 acres isn't alot, but I do think it can be done. It all depends on how much you really want it to work. Chickens and rabbits are easy to start with and easiest for housing. Back north I'd build according to winter needs...something we can enclose for more indoor spacing during really cold, snowy, nasty weather. Rabbits are just as easy -- and let's not forget, prolific breeders -- so maybe just adding a room onto the end of the chicken coop to run a couple rows of cages.

Cows and pigs are moving into different territory. We have hogs. Pain in the rump roasts but oh-so delicious afterward. Not sure I'd care to have any more in the future, though. I am not convinced they are truly worth the aggravation yet. Still, pigs and cows can pasture together easily enough, but space? There isn't really alot with 2 acres, so we aren't necessarily looking at keeping them on pasture, so feed over winter...maybe raise them to butcher off before winter each year? Could be do-able, but really...I rather think the variety of animals on such a small space just isn't going to be easily achieved.

Garden and fruit space? Plenty of it, I think. My focus would be an awesome garden with more than enough food to go around, and lining that with fruit trees and bramble fruits. Then I'd look to those chickens and rabbits for our main food source. Maybe barter off some fresh chickens and rabbits for the occasional splurge of beef for dinner.

I just don't see the larger animals on the small space being cost effective. There won't be enough space to adequately rotate pasture areas and allow for regrowth. Dry-lots are doable, but not very animal friendly, and definitely not cost effective.

My personal thought (ya' knew I'd have at least one, right??). It ain't happening. Not such grand scale plans on such small scale land. It's a great size for a beginner homesteader, certainly, but I think it's setting the cart before the horse to plan on diving in head-first on this scale. Maybe I'm totally wrong (yes, it's been known to happen once or twice before...) but I think something on that scale will pretty much turn one off of homesteading. It's just too much, too fast.

What would I do, newbie from the city let's say, I've just bought my 2 acres and I'm getting itchy feet for homesteading? Garden and fruits, chickens and rabbits. Forget the cow and pigs for now. Plug every available penny into the 'land fund' kitty and pray for another few acres adjoining to open up. Or, start honing my skills now and save for that greener pasture down yonder road in a few years. I'd be learning all I could about canning, drying and preserving everything from that awesome garden and homestead orchard. I'd be changing my lifestyle to accommodate more chicken and rabbit, less burger and chops. I'd be starting on that homestead path of make if from scratch.

Use it up,
Wear it out,
Make it do
Or do without


That would become the family creed. Everything homemade from scratch, natural and moving in large strides toward self-sufficiency and complete God-reliance.

Then, one day, when I was no longer that newbie from the city with big plans I'd venture off to my real, true, forever patch of God's Green Earth. Fully armed with my homesteading skills and prepared to learn more skills...like raising the family beef cow and the mini herd of piggies (hmmm...would a group of pigs be a herd?). Maybe at that point I'd be ready to even raise some of my own grains for feed, too, or a bit of hay for winter storage.

Homestead Homeschooling...


Homeschooling goes on...

Ever had one of those mornings where school just sort of starts rather on its own?

I over-slept. Not that I've never slept beyond children rising and getting busy, but once in a while, it does happen.

I think I'm more 'thoughtful' of my husband's le
aving this weekend for his new job than I care to admit.

He will be gone a good 12-18 months. He'll only be 6 hours away, but still...we've never really been apart for any serious length of time. He has gone to help on jobsites where he might be there 7-10 days...but 12-18 months??

I'm not really worried -- LOL, we're stout country folk here. No, let me rephrase myself -- we are stout backwoods, mountain-living, rural folk.


Think some sort of combination of Caroline Ingalls meets Olivia Walton meets Ma Kettle.

That would be us. The Ingalls-Walton-Kettle family. We are just the other side of rural out here on our mountain, but we have enough civilization around us to be comfortable. Town is about 13 miles down the mountain and over the highway. hey -- we're big time now -- we just got a Super Wal-Mart here.

But, I just haven't had a sound sleep all of this week now and today, it sort of caught up with me I guess. The children have morning tasks done aside from barn chores, and some are doing school without me.

Our schooling looks like this...on a good day...Rod & Staff books scattered along the harvest table we have. There is math, English, several Pathway Readers, the large KJV Bible and the big green Webster's Dictionary. The white board is ready with Bible verses for copy and memory work. Someone might be over in the living room, listening to a CD from Homeschool Radio Shows to give us a narrative later on. And the littles are coloring. That's their main contribution to a school day most of the time. They grab their ABC series and the crayons (ok, they are crayons only in the loosest of sense....how do you keep proper, intact crayons with so many oungers around?) and they begin creating masterpieces of school work for the day.

We have several read-aloud times during the day. Could be Considering God's Creation, or Mystery of History, our Heroes of History books, or some of our family reading time books...Little House on the Prairie series, Dear America or My America series, or any of our Rod & Staff story books we've been collecting.

Later today someone will have started a Daniel Boone DVD and most will be sitting in the living room. They might pick Christy, but usually they go for Daniel Boone...or one of the original Adventures of Robin Hood. We like that old time television stuff 'round here.

But...as I sit here, school is going on...crayons are all over, and one of the middles is reading a Pathway Reader while the youngers work on their math workbooks...one complaining because another is getting farther ahead.

This is a good morning. It's these days, when Mom might not be doing her part as she should and school just flows along regardless, that I sit back and get that warm, fuzzy, homeschool-y kind of feeling. Right now, public school would be nothing but arguments and paper fights and mayhem.

Don't get me wrong -- we have mayhem here too. Quite often.

That's why we live just on the other side of rural. That's where the Kettle side of the family comes into the mix!

Morning Showed Up!

Isn’t God good?

If God should choose to extend such grace to me, this is what I hope to do today:

* follow our Bible time with a good read aloud session
* pick a couple bouquets of sunflowers from my yard
* bake chocolate chip cookies with my 4yo
* hold my snuggly peanut baby lots and lots
* prepare a meal for my postpartum friend and her family
* bring my hubby and his staff drinks from the locally owned coffee shop
* pick up our fresh milk from our local famerette
* get a nap to refresh from my late night
* touch base with our music teacher (she’s been in Kenya!)
* school all of the children in various subjects
* have a good cup of black tea with milk and sugar while the children play
* clean the master bathroom
* begin cleaning out garden beds to prep for fall planting
* spend time with my hubby working on barn plans

Well, even if it all falls apart, at the very least I hope to just walk with my God today in a more peaceful manner. It’s light outside. That alone is a good sign.
