Delicious Homemade Rolls & Flax Seed Breakfast Muffins

I recently discovered two wonderful new recipes for homemade breads... I thought I'd share them here in case some of you would like to try them out for holiday dinners.  Warning: both these treats can become addicting!  Enjoy!


Easy Yeast Rolls

A friend brought these to our church pot luck this past Sunday.. she could hardly get them out of the church kitchen oven fast enough!  I don't think a crumb was left... these are the BEST homemade rolls I've ever tasted. 


1/2 C warm water (110 degrees)

2 packages yeast

1 TBSP sugar (I use sugar cane crystals)

Mix together and set aside.


 

1/2 C sugar (or sugar cane crystals)

2 C warm water

1/2 C oil (I use olive oil)

2 tsp salt

4 C flour (I use whole wheat hard red flour)


 

Mix together sugar, warm water, oil, salt and yeast mixture.  Work in flour a little at a time.    Use hands to knead dough.  Place dough on floured surface and knead until you can handle the dough without it sticking to your hands.  You may need to work in more flour, up to 1 cup.  Place in a greased bowl and cover.  Chill in fridge until ready to use.  Shape dough into small rolls.  Cover and let rise about 1 1/2 hours in a warm place.  Bake at 350 for 10 to 15 minutes.



Whole Wheat Flax'N Apple Muffins

I got this recipe off a box of milled Flax Seed I recently purchased from our grocery store.  I decided to try it and we've been enjoying these delicious muffins ever since!  Very tasty with sliced bananas and orange juice for breakfast.  My girls and husband love them!  (See below for more info on flax seed.)


1/4 C milled flax seed

1 1/2 C flour (I use whole wheat pastry flour)

1/2 C sugar (I use sugar cane crystals)

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 egg, beaten

1 1/2 C finely chopped apples

3 TBSP oil (I use olive oil)

1/2 C milk

1/2 C chopped nuts (optional)


Blend dry ingredients together in a bowl.  In a seperate bowl, combine egg, oil and milk.  Add dry ingredients to egg mixture and stir until just blended.  Fold in apples and nuts.  Batter wil be thick.  Fill well-greased muffine cups 1/2 full.  Bake at 400 for 18-20 minutes or until top springs back when touched.  Yummy!


A note about flax seed:

I've been very impressed with what I've recently discovered regarding the health benefits of Flax Seed (not to mention the wonderful flavor)!  Just 2 tablespoons of milled flax seed contains 4 grams of fiber and 3 grams of protein.  You can add it to any homemade bread, muffins, pancakes, or sprinkle it in oatmeal, smoothies, yogurt, and just about anything else!  (Okay, maybe not anything else, but the possibilities are pretty endless!)


Aside from fighting high cholesteral and diabetes, a regular intake of flax seeds can help fight cancer, constipation, inflammation, heart disease, and relieve symptoms of menopause!  I am especially interested in its ability to boost the immune stystem, since all of us have been dealing with sickness recently.  To read more about the health benefits of flax seed, click here!

I've heard of the health benefits too - sure, it needs to be researched more, but it looks promising.
