How to Freeze Fresh Strawberries

I love this time of year- strawberries are in season and are finally affordable!!  The last few years I've bought extra strawberries when they were on sale and froze them whole... much to my dismay, the result was mushy, squishy, and less than desirable berries!  An elderly friend recently shared with me the following "recipe" for freezing delicious strawberries... the result is wonderful!!  These strawberries make a suculant topping for homemade icecream, cake, or you can just enjoy them by themselves!  These are SO much better than store-bought frozen or canned strawberries!! 

To freeze delicious, just-like-fresh strawberries...

Wash strawberries and remove tops.  Slice or quarter berries and place them in a bowl.  For each pint of strawberries you'll need 1/2 cup sugar (I use organic sugar or evap. sugar cane crystals).  Add sugar and stir; sprinkle approx. 2 TBSP water over strawberries and stir again.  Allow strawberries to sit about 10 minutes until they make their own juice.  Stir; place strawberries into freezer-safe bags or containers and freeze.  These will keep in the freezer for months.  Enjoy!!

I will keep your strawberry tip in mind. We don't tend to see flats of strawberries till later in the summer when it is jelly making season. I appreciated the tribute to your mom. It is amazing how much our moms have invested into our lives and in turn, how much we invest into our children's lives. It wasn't until my daughter entered her high school years that she really appreciated the efforts.

awesome, thank you! I have some strawberries right now that I worry are going to get yuckky on me. I'd been wondering how to preserve them without doing the jam/jelly thing. Just simply don't have time or supplies for that yet. :(
