Granola Recipe

This was a BIG hit with my whole family... even my 6 year old son. Cinnamon Granola 4 Cups Rolled Oats (Not Quick Cooking) 1/2 Cup Chopped Pecans (0r any other nut) 1/2 Cup Sliced Almonds (Or any other nut) 1/2 Cup Dried Cranberries (Or raisins or other dried fruit) 1 Tablespoon Ground Cinnamon 1 teaspoon Vanilla 1/2 Cup Canola Oil (I have been able to reduce this to 1/3 to lower fat) 1/2 Cup Honey
Mix oatmeal, nuts, cinnamon and vanilla in a large bowl. Add oil and honey and mix well. Spread on lightly greased cookie sheets (or my lazy way...parchment paper on cookie sheets). Bake at 375 degrees for 10 minutes and stir, bake for another 10 minutes. Let cool and add dried fruit. When completely cooled store in an airtight container. We love this with yogurt! Enjoy!
