Kimi at Nourishing Gourmet is hosting a frugal and nourishing carnival!  What a great way to get some healthy and inexpensive meals!  This carnival is focusing on main dishes.  Can't we all use some tried and true help there?  The next carnival will feature sides, salads and desserts and will be here.

See the others recipes submitted to the carnival here.

I was given some zucchini and found this recipe to use it in.  All the children thought it was good enough to add here.

Chicken, Tomato, Zucchini Stew
4 cups tomatoes
3 1/2 cups chicken broth
4 cloves garlic, minced
2 tsp basil
1 tsp EACH thyme, marjoram
2 tsp salt
cubed, cooked chicken meat
2 cups brown rice
2 medium zucchini cut into 1/2" chunks

Combine tomatoes, chicken stock and spices.  Bring to a boil.

Add remaining ingredients and simmer 45-55 minutes until rice is cooked.

Very good with 40 minute rolls!

Your recipe sounds really great. :-) I love how it is so simple and easy to make, and uses veggies in season right now. Thank you so much for being part of the Nourishing Frugal food carnival (and, hey, if you could do a link to the carnival post, that would be wonderful as well. ;-) ) .

Keep up the great cooking!

Blessings.

One more thing, I wanted to mention that I LOVE homemade chicken broth. It adds so much nutrition to our food, and so much taste. It really "makes" the soup, doesn't it. ;-)

Kimi

Sounds yummy!

I really need to find ways to cook up zucchini, as mine are about ready to harvest, so this sounds great to me! Can't wait to try it!

WOW! I just realized that I have every item for this already...guess what we're having for supper! lol

Hey! Very exciting that this came from Kimi H. I have known her in-laws and family since Josh was only 7 years old. The H's are from our Ohio hometown and we are still rather close. Unfortunately, since they're SO far away it's only e-mails & a few phone calls per year. The H's are so special to us...they led me to the Lord, and OF COURSE turned us on to homeschooling and introduced my dh and I!!

It has been awesome to watch where the Lord has taken that family! We've prayed for each other through much.

Blessings from Ohio, Kim Wolf<><
