Pork in in the Freezer

We finished our butchering project and DH actually said it was fun.  The kids and I finished up the sausage this morning.  I seasoned the sausage this morning and cooked it up to test it.  It was soooo yummy!  I saved a generous portion out to cook up for dinner with some eggplant.  This is one of our favorite dishes and it will be so fun to have it with our own pork and eggplant we froze this summer from our garden.  We serve it over rice.  The kids and I also made sausage links for the first time.  It worked pretty good, but it didn't seem that the meat went very far.  We could eat that much meat in 1 month.  Next time we need to make more sausage since we are big breakfast meat eaters and our other meals are supplemented with beef, chicken, and fish.  If we had a cold snap where we could age some beef, we would probably try butchering our cow next time.
