Baked Acorn Squash with Apple Stuffing (diabetic recipe)

1 medium acorn squash
2 small apples
2 Tbl diced celery
2 tsp minced onion
2 tsp melted butter
2 Tbl water

Preheat oven to 400*F
Cut squash in half, remove seeds, and place cut side down on a greased baking sheet.
Combine apples, celery and onion.  Add butter and water. Put in small baking dish and cover.
Bake squash and apple stuffing for 45 minutes.
Salt squash with a dash of salt and stuff with apple mixture.

Yield 2 servings


Busy Day Soup

Busy Day Soup
  • 1 lb hamburger
  • 1 small onion, diced
  • 1 can bean with bacon soup
  • 1 can vegetable soup
  • 2 cans water (use soup cans)
  • 1 can tomato soup
  • 1/2 tsp chili powder
Brown hamburger.  Add onion and cook until soft.  Add rest of the ingredients.  Heat to blend flavors.  Can also be cooked in slow cooker.

Orange Rolls

2 Tbl (2 envelopes) yeast, dissolved in 1/4 cup water
1/2 cup sugar
1 1/2 ts salt
1 cup warm water
1/4 lb butter
3 beaten eggs
4 1/2 cups flour

Glaze:orange juice from 1 orange and powdered sugar

Filling: grated rind of 1 orange, 1/2 cup sugar, 1/3 cup melted butter.

Make glaze and filling. Set aside

Combine sugar, butter, eggs, and water.  Add 3 cups flour and beat well with mixer for 2 minutes.  Add rest of flour.  Cover and let raise 1 1/2 hour.  Pour on board and cut dough in half and roll to 18 X 6 inches.  Pour on half of filling and roll up like jelly roll.  Cut into 1" rolls.  Put in greased muffin tins. Repeat with remaining dough and filling.  Let raise 1 1/2 hour.  Bake 400*F  for 12-15 minutes.  Put on glaze and serve hot.



Noodles with Cabbage

8 oz pkg wide noodles
4 cups shredded cabbage
2 ts sugar
1/4 tsp pepper
1 ts salt
6 Tb butter
1/2 ts caraway seeds

If using fresh noodles, cut into wide noodles about 4" long.

Sprinkle salt over cabbage, toss lightly, and let stand 30 minutes.  Squeeze cabbage to release liquid; discard liquid.

Melt butter in a wide frying pan over med. heat.  Add cabbage, sugar, caraway seeds, and pepper.  Cook, stirring occasionally, until cabbage is crisp-tender.  Keep warm

Cook noodles in a large kettle of boiling salted water until tender.  Drain, then toss with cabbage.  Makes 6 servings.

(sometimes I like to add sauted onions too)


Savory Sausage Casserole

Savory Sausage Casserole

1 lb bulk pork sausage
1 can chicken noodle soup
1 1/4 cup finely chopped onion
2 1/2 cups water
1 cup uncooked rice
1 cup chopped celery
1 Tbl soy sauce

Brown sausage, drain.  Grease casserole, mix in soup, sausage, rice, and celery; add water and soy sauce.  Bake 1 hour at 350.  Serve with apple sauce.


Sugar Cookies

These cookies are sooooo soft!

Sugar Cookies
1 Cup shortening
1 cup sugar
2 eggs
2 tsp vanilla
1 tsp salt
1/2 tsp baking soda
4 cups flour

Cream together shortening, sugar; add eggs and vanilla.

Sift together flour, salt, soda; add to creamed mixture.

Heat oven to 375*F

Form dough into 2" balls and place 2" apart on cookie sheet. 

Bake 8-10 minutes or until edges start to turn golden.

You can roll dough balls in sugar, sprinkles, or coconut before baking.  They also taste great with a hershey kiss pressed into dough ball before baked.  You can also frost these.


Coffee Cake Muffins

Coffee Cake Muffins

Mix the following in a small bowl and set aside:
(topping)
3 Tbl all purpose flour
3 Tbl brown sugar
1/4 tsp cinnamon
2 Tbl butter, cut in
3 Tbl chopped pecans

Mix the following in a large bowl and set aside:
1 1/2 Cups flour
1/2 cup sugar
1 1/4 tsp baking powder
1/2 tsp cinnamon
1/4 tsp ginger
1/4 tsp baking soda
1/4 tsp salt
Cut in 1/4 cup butter

In a medium size bowl, mix the following:
1 egg
1/2 cup buttermilk

Make a well in the center of the flour mixture in the large bowl.  Add the egg mixture to the well and draw in dry ingredients.  Mix until just moistened.  Batter will be lumpy.

Fill muffin cups that have been lined 1/3 full with batter (should use about half the batter).  Cover batter in cups with divided amounts (abt a Tbl each) of half the topping.  Fill the cups with remaining batter and top with the rest of the topping.

Bake at 400*F for 17 minutes.
