YUM! Macroni and Tomatoes Recipe

This is a delicious family recipe! I have been making this recipe a lot since Mom has been sick, it is something that isn't spicy so, she eats this often and she LOVES them!!The doctors want Mom to gain a bit more weight before she starts chemo, because chemo tears her down. I have been trying to make her favorite foods so she can gain the weight that the doctors want her to weigh!

Here is what you will need to make this recipe:

  • One large pot with lid
  • A Strainer
  • A Large Spoon
  • 1 Cup of Elbow Macaroni
  • 1 Quart of Home-grown, Home-canned Tomatoes
  • A little butter
  • 1 Spoonful of Bacon Grease

First, prepare all of your ingredients.

Then, fill the large pot 1/2 - 3/4 way full with water. Put the pot  with lid on the stove on high heat.

When the water in the pot begins to boil, put in the on cup of macaroni. Let the water and macaroni boil for 10 - 11 minutes on high heat. Stir the macaroni ocasionally to prevent the macaroni from sticking to the bottom of the pot.

After the water and macaroni have been boiled for  10 - 11 minutes, pour the pot of water and Macaroni into the strainer and strain out all of the water. Then, put the macaroni back into the pot. Put a little bit of butter into the pot with the macaroni, just so the macaroni doesn't stick to each other or the bottom of the pot.

Now, pour in the quart of tomatoes into the pot and add the spoonful of bacon grease. Put the pot on low heat on the stove so it stays warm until ready to serve.

This recipe is really simple and it is really delicious. I hope you all enjoy it!

This is my Gram's favorite recipe. She first started to make it during WWII when there was a lot of meat rationing. During her Senior year, all of the girls in her Home Ec. class need to make a lunch and invite a friend to share it with them and this was the meal they choose. My Gram decided to invite the neighbor boy known now as my grandfather. The rest was history!

I remember eating this as a kid at my grandmother's house in Montana, alot. We always liked it.

For your mama, your best bet to get her to eat and something that doesn't bother her is to make smoothies/juice/shakes. Use highly nutritious foods with protein if you can. There are alot of recipes out there. The thing is ... you can drink in volume much easier than eating ... with no appetite and no energy expended for chewing. I hope this helps... : )
