I'm up late , tonight !!

Well dear friends ,I very badly sprang my ankle last thursday . Like ussual it will take some time to heal.It is swollen,and keeps hurting.(I went to hospital) So,those of you that know me, know that I am a busy body .  I thought I could after taking it somewhat easy for a week start back to work and do household task . Ha, Ha, Ha is wat the devil said to me . I was slowly walking outside on flat ground this thursday to go hang some cloths on line before we get all the expected rain. WEll ,I didn't quite make it . The cloths basket went one way and me the other !!! I fell out on the ground !! I re-injured my ankle , I was hurting worst.  Back to the E.R. I go ,this time calling a friend to bring me .I thankfully didn't break anything ,yet! The nurse said after reviewing the 1st and now 2nd X-ray . I very badly pull and strain the ligaments and tendons in my whole foot and ankle area . It's so weak that it keeps giving out on me ,and that is why I fell out a second time. It was worse than the first Dr. thought . So ,round 2 this very educated DR. put my leg in a cast ,to support my ankle so I don't break anything . I have to wear it for a week and go back and see how it is healing . I can't stand not being able to just sit still and do nothing !!!! I have no choice this time so my foot can get better . I have to stay off of it for a week as much as possible . That's going to be hard for me !!! I took my meds tonight and layed down for a couple of hours .Then the pain and burning of nerves (I guess)woke me up . I wasn't going to even blog about all this crazy stuff with my foot/ankle but I didn't have anything else to do at this time of night . LOL  Keep me in your prayers ,Thanks . 

Our first week of Home High School went really good . I pray it stays that way all year !! I wanted to share pictures of our Friday Supper Night .It is now called "Pizza Nite !!!  I got the recipes from the www.hillbillyhousewife.com .The recipe makes 2 large 16-inch pizzas or 1 lg.16-inch and 1 9 by 13 inch pan size .It is very easy and very tasty. I have had fun adding and making all different kinds of pizza !! It has really helped lower our grocery bill . I have also added 2 bean meal nights .It's healthly and cheaper ,and why not !!I am saving so much more money doing these couple of changes . Now we can spend our hard earned money for a rainy day !!! That makes me happy !!! Have a nice weekend ,Shaune

Breakfast on -the- run !!!

Fruit and Cereal Bars

3 cups whole wheat flour

2 tsp baking powder

1/4 tsp. salt

3 cups quick oats

1/4 cup Honey (if out use syrup)

1/4 cup sugar

1 1/2 cups margarine (or butter )

2 cups Jam or fruit puree ,spread , I used homemade blueberry jam.

Combine the first 6 ingredients . Cut in margarine until crumbly . Pat 2/3 of the mixture in bottom of ungreased jellyroll pan (10 by 18 inches) or close to this size. Spread with jam and sprinkle remaining mixture over top of jam. Bake at 350' for 30 mins until lightly browned . Let cool a bit ,cut in bars or squares . Healthy !!!

This is just  choc.chip granola bar batter put into muffin pan .

This is raisin granola bars . I  cool them all and put into individual bags . I keep them fresh longer in the frig. I like to keep healthy  snacks on hand for my family . It is much cheaper and more tasty !!

Our school is starting next week !!!!

How are ya all doing ? Summer has come and just about gone . But, the hot weather is still here !!! We are starting school back on the 18th . I think all the public school in our area started on the 8th . That is the fun of homeschooling , we make our own schedule to fit our needs .  It feels so great to be in control of your childs life. Insteaded of giving them over to strangers !!! Yes ,the day will come and he will go out into the big ol'world. But ,to me the world is nothing like the schools say it will be . !!! in life you get to pretty much pick in choose what you want . In school you do to please the teachers and put up with crap off the (not so well raised )bullies . And no one ever sees them doing anything wrong , I wonder why????Thats enough about that !! I am so thankful the God has give me the desire to teach my child in the comfort of our home. I am truely blessed with an understanding loving and caring husband . He supports me in everyway that he can.

O-yea we but heads sometimes ,but mostly I'm the one going crazy .He just looks at me like ok do you feel better now ? LOL That is my challenge ,there is no challenge , he never feed the fire .That tick me off even more sometimes !! I don't get it ! Those times have been very few in our marriage .We have never had a fight .Thank you God !! It has been smooth sailing !!!! Sugar and spice makes every thing so nice !!!!

Next ,LOL .I have been inside the past 4 days . One it has been very hot and two it has rained for the past 2 days .I did some baking .I stocked up on some school snacks . I made granola bars ,blueberry bars and choc. chip gronola muffins . I like to have healthy snacks on hand . I wrapped them in single serving and put in frig . I'll make some more and freeze . Now, I am to make rice ,oatmeal, choc.chip, blueberry and peanut butter pancakes to put in the freezer . Last week I made some english muffins and froze them as well. I'm just amazed that you can make anything to like right in your own kitchen . It just takes the desire and some time. And you can give your family healthy and fresh foods .With out all the unhealthy fillers ,etc.

my son is still looking for info. own raising beef cows(for a profit) and a family milk cow(for us some milk/cheese). If any of you have any helpful info ,please pass it alone to us . We are not sure about this subject . I have never raised cows ever before . So ,I need all the tips and info we can get . 

I made our 2 billy  brush goats happy !! The older fixed male goat ,"blacky "is like ok its just a young chick !!!  Well ,I had  fun at the auction barn . I really shouldn't be allowed to go there . I am such an animal lover . I was just dreaming and loving the barn filled wth animals !! I wanted the large barn and all the animals ,LOL !! This is when I hear my husband voice his thoughts . Your must be crazy !! How would you feed them ??? And o-yea was you talking to me I didn't hear you if what I told him .You know like they do us !!! So, he thought the was smark driving the Lincon Town Car (NOT A NEW ONE )to the auction barn . Ha ,HA, hA ,he knows I will and have brought home animals in it before . Yeap in the back seat/floor board there she sits nice and calm .She is a creamy tan color with light brown ,very sweet face and white belly . Cute ,cute ,cute ,I named her Latte' ,like the coffee .I guess this is spelled correct . And now we have a total of 4 goats ,grazing away happily on our 10 acre farm . And soon as she is ready to marry "chomper" , I hope we get a few more goats .!!! I'm the person that you don't need to say no way that will never work or happen !! If there is a will and I have the disire there is no stopping me . The worst thing to do is tell me no and to put me in a box. I'll find a way to make it happen  .Why ? Because, GOD made me just the way he wants me to be. I was just wondering how many of you have a family milk cow(s). I'm not wanted to have a dairy farm . Just thought about a couple of family milk cows. I have never had cows. But I do have lots of other farm animals . I really enjoy having all the animals around . I just wanted some info. on a small milk cow ? If it was really worth the daily work or not . Before , I fall off the turnip TRUCK !!!!!! LOL  

I did a little research on having a mini jersey or regular jersey cow. They seem to be the most popular . And the sweeted milk and friendly as well. Others said the Belfairs,and Dexter. Which a Belfair are a mix of Jersey and Dexters . I know these are also a very pricey family milk cow .What do you think and know about all of this ?

Could I just get a small/med cow mixed breed and she'll get the job done ? The mini Jersey give 1 1/2 to 3 gallons per day and about one quart of cream . And that would be more than enough for my household  . But is it worth is all in all ?

What are you suppose to do with the cream ??? I know it is the best and richest stuff !! Yea but how and what do you use it for ? Is it like real butter ? Do you use it as  coffee creamer  ? Is it like half and half ,but richer ? I just really need to look into this very closely . Please help me I am very Green on having a family milk Cow. Anybody that knows about this ,please share it with me . I would love to here about it . Thanks, Shaune

The top by the coop is covered . The rest is covered with wire over the pvc pipes to keep the unwanted critters out at night .

I made my very first batch of BREAD !!!!!!

I finally bake my own Wheat Bread !!! It was so much fun and very easy !!! My DH even made a loaf with me . I was very pleased with the turn out . It was nice to eat a sandwich with the bread that we baked . My DH brought sandwiches to work to just show off the bread. LOL . He never brings sandwiches to work . We have already baked more bread and froze it . I got the recipe from the HIllbilly Housewife site about 1 year ago. And just decided that I was going to try it . Heck, I make and bake everything else ,why not  try it . I turned out so beautiful  !!! I don't think my family will every want to eat store bread again . I know it's healthier for my family . It does take some time to rise and make . But ,so very worth it to see the smiles on my families face !!! See if I can make bread ,you all can to !! I really didn't think I could make sandwich bread at home and it turn out so good . Have a great week ,Shaune
