Chicken Picatta Recipe
I really enjoyed this. It came from Good Eats, by Alton Brown on the food network. (It's under turkey picatta.)
chicken breasts cut in 1/2
flour
6 Tbsp. butter
2 Tbsp. olive oil
1 onion or shallots
1/2 c. white wine (or white wine vinegar)
1/3 c. lemon juice
Preheat oven to 200 degrees.
Wrap the chicken pieces, one at a time, in plastic wrap. Flatten with a meat mallet (or the side of a can of soup) while meat is still in the wrap. Be careful, b/c poultry is easy to tear. (It's no big deal if it's torn, though, but you don't want it too shredded.)
Salt and pepper the chicken pieces. Dredge the chicken in flour lightly and shake off excess flour.
Heat a large skillet with 2 Tbsp. olive oil and 4 Tbsp. butter over med. high heat. Once hot (but not to where its smoking), add chicken pieces, cooking quickly (about 1 minute per side). Place in baking dish.
When all chicken is through, place in oven to keep warm. Saute onions/shallots in same skillet for about 1-2 minutes, until transluscent. Add wine/vinegar. Cook about 2 more minutes, to reduce. Add lemon juice and 2 Tbsp. more butter. Salt and pepper if needed. Serve over chicken.
