Wesley's Favorite Twice Baked Potatoes
2 baking potatoes
sour cream
bacon bits
montery jack cheese (although any type is fine.)
ranch dressing
almonds
green onion
Punch holes in the potatoes with a fork all the way around the potatoes. Not too many, though. (If you don't, the potatoes will explode... I learned that the hard way ) Bake in the oven at 400'F for 45 min to 1 hour, just long enough until the potatoes give a bit when you sqeeze them gently.
Take out, and let cool for about 10 min.
Cut length-wise in half. Scoop most of the softened potato out, leaving the shell in tact. **Do NOT discard the shells!** ***The most important part*** is to leave a little bit of potato still in the shell to provide stability. Otherwise, the potato will not be firm enough to serve out of.
Mix the insides of the potato with your preferred amount of sour cream, a bit of ranch (italian is good, too) dressing, bacon, almonds, green onion, and a good bit of your choice of shredded cheese.
Scoop the potato mixture back into the shells, and sprinkle with cheese. Put on a cookie sheet and bake again until cheese is melted. Serves 4.
