Canning Projects

I am canning more sockeye salmon tonight.  This brings us up to 33 pints.  I have enough fish to do another batch of 14 pints tomorrow night.

There are a few good sales at the stores this week.  I am trying to decide if the prices are low enough that I should buy some to preserve - can or freeze.  They have red or black plums for $1.79/lb, green or red grapes for $0.99/lb, zucchini for $0.99/lb, and green beans for $1.98/lb.  I would like to make Rod some plum jam.  Also, I have been wanting to try making some plum sauce - the kind at the chinese restaurant is so yummy!  I'm on the lookout for more good sales as they come up.  I would love to get pears again and can them.  We just finished up a couple jars from 2 years ago and they were GREAT!

The blueberries should be getting ripe now and this weekend I will have to go find some.  With those I will make jam, pie filling and maybe just can them by themselves.  I could freeze them too, but I'm trying to can more and free up the freezer space  :o)  My red currents are just starting to ripen, so I'll need to think about what I want to do with them.

What have you been canning?  Have you tried anything new this year?

Plum Butter?

If you want to try something yummy then you should try canning plum butter. It is like apple butter but with plums. It is yummy on toasts, muffins, pancakes, etc. Let me know if you're interested in the recipe :0)

Nikki

Hey there stranger!

Hey Dear Friend! Thanks for stopping by. I've been lurking once and awhile to see how you've been doing. Yeah, we had a great time as you can see.

Ah, funny you mentioned canning. I'm checking out the new Canning Carnival.

I have a small garden so I'm waiting for the basics to come up. Having trouble with Edward the pesky woodchuck who's eaten EVERY lettuce head I have to a stump. I'm at odds with him. He's pretty smart.haha

We're going to a local pick your own farm and I'm picking two buckets full of blueberrys and raspberries again this year and two buckets of sweet cherrys as well as a bucket of currants. So I'm in the canning mood.

August is Peach Season for us so I'll be doing those soon too...then comes apples. Yummy!

I have YET to can salmon. I don't have a pressure canner yet. I'm dying to get one though.

Hows the soap business coming?

Talk soon friend!

Rebekah

Thanks!

Thank you for stopping by and leaving the comment on my blog.. Which is really rather odd, because YOU are the one who actually inspired me to try canning!! I never really thought about canning normal stuff... like my chili and veggie soup.. I always related canning to stuff you pulled out of the garden. =) So I am SOOOO very excited to get started.. my garden isn't doing all that great.. but hopefully it will come along. We have had ALOT of rain this year compared to years past.

I love reading your blog.. and hope you enjoy mine too. Come visit more often!

Blessings to you,
Jennifer

Just in case you have any pears

One thing you can try to do if you happen to find any pears on sale is "pearsauce"...kinda like applesauce but with pears. We're coming up on pear season here in Texas and that's on my agenda for the next few weeks...that and dehydrated pears (that's the new thing we're doing these days - dehydrating that is). I can send you a recipe if you're interested!
By the way, your chicken coop looks fantastic! Kudos to you for doing much of it on your own!
