Snow Ice Cream!!!

Our first snowfall of the year began very early this morning and lasted almost all day. It is beautiful! We all get so excited around here when we see the first snow. It is somehow magical to look out and see everything covered in white. Peaceful. 

 

We decided to bundle up early, and head out to church. We stopped and picked up my son's best friend, and were on our way. After church, the two boys took thier trusty snowshovels and set out to shovel driveways. They made a little cash, then took some time out for sledding.

 

Later, while Daddy decorated the porch with lights, greenery, wreaths and sleds, Miranda and I decided to make Snow Ice Cream, since the snow was still fresh and fluffy. I decided to try a healthy alternative this year, as I do with almost everything these days. So, here is my revised, healthy, yet yummy snow ice cream recipe:

 

One freshly scooped bowl of snow

Add a few splashes of rice milk

Add a couple shakes of stevia powder

Add a drop or two of vanilla

Stir, add a bit more of the above to taste

Eat, and enjoy!

 

This was very yummy, my daughter didn't even miss the sugar, and she cried out for more!

Hi Michelle - yes, we had snow too but not as much as you did. There is still a little bit around on the ground. It has been so cold this past week but today we all got excited when it hit 40! We got our tree last Friday in Wapato. It was a beautiful, clear day and there was quite a lot of snow there - made it just the picture perfect day to get a fresh cut tree.
We have been buying kefir lately. I had a question though - is the flavored kefir at Winco any good for you? Or do you need to get it fresh from a goat for it to have any health benefits? By the way, we are doing a cultural study this year with our co-op - thanks to your idea on your blog!! Jill

I have a question, do you milk your ND goats? I had heard they are difficult to milk. We are hoping to get some goat for our farm.

Oh yes, we sure do!! That is the reason we have them primarily, for the wonderful, rich milk that makes excellent cheeses due to the very high butterfat in the ND milk. Where are you located?

You can read about them and see ours. They give on average 1-2 qts per day, perfect for the small homesteading family. We will have 4-5 doe's in milk this Spring.......way more milk than we need but I make a lot of cheese and freeze extra milk for the winter months IF we decide to take a break from milking, like we are this winter.

Your snow cones sound wonderful. It is 78 degrees this week, ugh. Way too warm, but I guess better than all the winter storms I've been reading about around the coiuntry!!
