Sweet Cinnamon Flax Muffins

For the last three months, I have been on an anti candida diet to battle some health issues, and at first it was torture, like feeling like I was going to cry every time I saw a piece of chocolate, or realizing that I couldn't eat 95% of the foods in my kitchen. It became easier though, and now I don't crave all the things I used to have almost daily, such as chocolate, mochas, breads, and cola. I even made it through the holidays watching everyone around me eating all kinds of candies and cookies, and I never tasted any of it.  Through it all I have come to appreciate all that I have learned, and realized that this is truly a healthy approach to eating. It does take more preparation, and this was difficult to adapt to as well, as I am used to the conveniences we have, but getting back to the basics, and back to food in its most natural state is so much healthier.

 

I recently had my blood work re-done and I am happy to report that my cholesterol has gone from high to normal. And my blood sugar has gone from borderline diabetes to normal. I have also lost 35 pounds since may. Here is a recipe I just made this evening, and I am enjoying one right now with a cup of lemon-ginger tea.

 

Sweet Cinnamon Flax Muffins

 

Preheat oven to 375

 

6 T butter,  melted

3 large eggs

1/4 cup coconut milk (reg or lite)

Beat these three ingredients together and then add:

2-3 tsp stevia

1 tsp maple flavoring

1 tsp vanilla

1 T vegetable glycerin

 

Mix the following together and add to the above:

 

2 tsp cinnamon

1 tsp nutmeg

1/2 tsp baking powder

1/2 tsp baking soda

1 cup ground golden flaxseed meal (I grind my own in a coffee grinder)

1/4 cup amaranth flour or your preferred flour (I used white spelt flour)

4 oz chopped nuts (optional)

 

Mix all ingredients together. Let sit about 5 minutes and mixture will thicken. Spoon into paper muffin cups and bake for 15-18 min. This recipe makes 12 muffins, however, you may also double the recipe and make 18-20 larger size muffins.

 

You could also add unsweetened coconut to these for variety, although I haven't tried it yet!

I am so proud of the changes you have made to your diet. I am just amazed at the strength you had through the holidays. Well done!

Yum!! I am making that asap! I LOVE muffins!
Good for you on changing your health! I am going for no sugar, white stuff, processed, etc. and 60% raw.
It's hard to say no to the cookies and Starbucks. Other than that I do well. I also am weaning myself off the mineral waters, since you said they block calcium absorbtion. I'm having one every other day instead of 4 or 5 a day!
