Saturday in the kitchen...

I like to have things in the freezer for breakfast or lunch on busy days, so I make my own "convenience foods," usually on Saturday mornings. I made stacks of pancakes (blueberry, buttermilk and carrot cake)  and froze them for quick breakfasts over the next few weeks.

 We love to eat buttermilk biscuits and would eat them with every meal! While I do enjoy cutting in the cold butter and working the dough, some mornings just do not allow for it. So today, I made a triple batch of  dough, cut it with my biscuit cutter and froze them individually on cookie sheets until firm. From there, I put them into bags. When we want fresh biscuits, I just take out as many as I need and pop in them in the hot oven. I did bake one batch and turned them into sausage biscuits for the freezer.The boys each managed to grab one before they went into the bags. :-)

 I brought in five pounds of sausage for the next several recipes, grabbed some potatoes, peppers, onions, and cheese and cooked up some breakfast burritos. Here is a fantastic recipe for homemade tortillas from a blog that I love. 

 I thawed seven loaves of bread dough and made stromboli for the freezer as well as olive cheese bread. Since I had some sausage left over, I made gravy to freeze in individual portions. After everything was tucked away in the deep freeze, I decided to go ahead and finish processing the apples into sauce. My youngest was the "taste tester" and reported that the applesauce needed no sugar. He said it tasted so sweet because Betty (the woman who owns the orchard) is sweet and she grows them. (I think he's right!)

 As a surprise, I also made come caramel apples for the boys. Youngest Son has a very loose tooth and we're hoping this will do the trick in a sweet way. It's been a very productive day. Though my apron is pretty dusty, my freezer is full, and I enjoyed every minute.

I, too, love making food ahead. I made cinnamon rolls to wake up to this morning. The kids loved them.

I love to make things and freeze them for convenience as well. My husband LOVES bisquits n gravy, though I have had to limit it with his high cholesterol.

Farm Kitchen

I like my kitchen. The big shining stove with its friendly wood fire; copper kettle singing its contralto song; plump black pot with its bubbling savory stew.

The rich, golden smell of cornbread ready to take from the oven, blending with the piquant spiciness of hot gingerbread. I like the wide painted floorboards and the red geraniums in the windows; the little brown pots with trailing ivy.
The view of the road where I can watch the R.F.D. man drive up to the mailbox.

I like to see the table set for supper, the red cloth, blue napkins and cream colored dishes. The cat lies curled on the rocking chair cushion. Shep lies beside the stove watching every move.

Soon I'll hear his footsteps coming through the woodshed and the soft clink of milk pails. Storms may lash outside; here in my kitchen--all is warm and safe.

A FARMER'S NOTEBOOK ~~~~~~~~~~

SPRING: half-cold, half-warm the April wind tugs at the chestnut's mane; he sets his hooves deep in the earth and furrows are left behind. Swallows call wildly to their wheeling loves.

SUMMER: the tall corn talks in the amber day; the tiger lilies bloom in the river marsh. The hay is in, the timothy meadows sway beneath the crow's black crying, slow and harsh.

AUTUMN: the heifers come down from the golden hill; the dooryard rose-hips have the hardness of coral; supper smoke rises straight and the nights are a chill; beneath the red maple leaves the ground lies sorrel.

WINTER: before green dawn the lantern light in the breathing barn casts a circle of the color of honey; hills climb through stars, my acres are drifted white; and my heart knows the taste of a good year strong and sunny.
