Linguine with Sausage and Spinach

Linguine with Sausage and Spinach

1lb linguine, penne, or spiral pasta

1 package of sun-dried tomatoes chicken sausage, cut into 1/4" slices (ex. Aidell's)

1/4C olive oil

4 cloves of minced/chopped garlic

a few dashes of red pepper flakes

1 bag of baby spinach leaves chopped or torn into bite sized pieces

1.  Cook pasta according to package.

2.  In a large skillet heat oil on med-high heat.  Add sausage slices.  Cook those for 2-3 minutes until lightly brown.  Add the garlic and red pepper flakes and cook 1 more minute. 

3.  In large bowl place the spinach and pasta; toss.  Add the sausages with the oil; toss.  Serve with toasted french bread and sprinkle with parmesan cheese.
