Ta-da! This is the ice cream cake Mother Dear made for Eric on his birthday last week. I meant to post a picture, but I just forgot. A few years ago she decided to make him an ice cream instead of buying one, and it turned out very nicely. She’s been making them ever since for his birthdays.

She uses ice cream sandwiches, chocolate ice cream, chocolate chips, Carmel topping, and chocolate syrup. She usually puts oreo cookies on it as well but this year we forgot to get some. Ah well, it was still very good.
