It pays to stay home


It's amazing how much work one can accomplish when one stays home...I was so grateful to be home today considering the week I have had running around and trying to accomplish everything for the wedding...Other than taking my kids to and from school....my day was spend doing dishes, baked bread, cleaned the frig and freezer in my kitchen, organized my linen closet, cleaned out and organized master bedroom closet...planted our potatoes with the kids, made spaghetti for supper, did four loads of laundry, organized the shelves in my laundry room, picked up my hanging baskets from the nursery... and even had a forty-five minute nap.  Ahhhh, what a wonderful day filled with accomplishment.   God is good.

The above picture is Puff Pancake that I made for the family this morning.

2 eggs

1/2 cup flour

1/2 cup milk

1/4 teaspoon nutmeg

2 tablespoons butter

Thinly sliced apples**

Preheat the oven to 425 degrees.  Blend the eggs in a blender (I use my kitchenaid) until foamy, then add the flour, milk and nutmeg, and blend well.  Melt the butter in a 9x13 pan. When the butter is melted, swirl it to coat the pan.  Put a layer of sliced apples ( or other fruit) on the bottom if desired, then pour in the batter all at once.  Bake for 15 to 20 minutes until puffed and golden.  Sprinkle sugar over all (if using apples, you may substitue cinnamon and granulated sugar) and bake for one miute more. 

**My gang prefers canned peaches...we have also done raspberries, fresh blackberries and blueberries...but peaches is the favourite around here.

** I also double this recipe and put it in my 10X15 pan, as the regular recipe is not big enough for our family.
