Pentecost and Happy Mother's Day

The Descent of the Holy Spirit
on the Apostles

The Holy Spirit appeared under the form of tongues of fire in order to fill the Apostles with truth and to prepare them to bear witness to Jesus. He also come to fill their hearts with love.

He is the Person of Love in the life of God. He is also like a breath, an aspiration of infinite Love, from which we draw the breath of life.

On the day of Pentecost the Divine Spirit communicated such an abundance of life to the whole Church that to symbolize it "there came a sound from heaven, as of a violent wind coming, and it filled the whole house where they (the Apostles) were sitting."

But it is also for us that the Holy Spirit has come, for the group in the Cenacle represented the whole Church. The Holy Spirit came to remain with the Church forever. This is the promise of Jesus Himself. He dwells in the Church permanently and unfailingly, performing in it without ceasing, His action of life-giving and sanctification. He establishes the Church infallibly in the truth. It is He who makes the Church blossom forth with a marvelous supernatural fruitfulness, for He brings to life and full fruition in Virgins, Martyrs, Confessors, those heroic virtues which are one of the marks of true sanctity.

Oriental Ramen Salad

With the weather warming up I thought I would share a recipe we enjoy!  Make a lot as it is addicting!

Oriental Ramen Salad

 

2 tablespoons butter or margarine
1 (3-ounce) package oriental-flavor ramen noodle soup, seasoning packet reserved
1/2 cup sliced almonds
2/3 cup evaporated milk
2/3 cup vegetable oil
3 tablespoons white vinegar
2 tablespoons granulated sugar
2 (10-ounce) packages romaine-radicchio
  1. Melt butter in large skillet. Crumble ramen noodles and add to skillet with almonds; cook, stirring constantly, until noodles are golden. Remove from pan; cool.
  2. Place evaporated milk, oil, ramen seasoning packet, vinegar and sugar in blender; cover. Blend until smooth.  (I don't use the blender...just shake in a jar.)
  3. Combine salad greens, noodle mixture, green onions and dressing in large bowl; toss to coat well. Serve immediately.

Makes 8 servings.

To make this a meal, add cooked sliced chicken and drained mandarin oranges.

The high cost of food - and a blog challenge

One of the biggest wastes in a food budget is not using the leftovers.   I was forever finding that strange looking mound in a plastic container when cleaning out the refrigerator.
 
Meats - add some cooked vegetables..add a little broth, thicken with flour and add dumplings.  Or use it in sandwiches, salads, or quesadilla, etc.
 
Vegetables - use in broth for stews, soups, etc.  Or my favorite way is to make fried rice and add all the leftover vegetables and meat. 
 
Fruit - I always add the one "too ripe banana" to a batch of muffins.  Our favorite way to use up fruit that may only have one more day is to cut it up...add a little yogurt and eat for breakfast or dessert.
 
Bread is one of those things that I always seem to have left - mainly just the crust and one or two pieces that seem a bit dry and nobody wants to eat it.  So I put them in the freezer and make croutons or bread crumbs, etc. when needed.  It's also good to make bread pudding out of...yum.
