Cocoa-oatmeal Jumbos

Cocoa Oatmeal Jumbos
These are the best cookies ever-
3/4 cup flour . 1/2 cup cocoa powder 1 teaspoon baking soda 1/2 teaspoon salt 2 sticks butter, softened 3/4 cup packed light brown sugar 3/4 cup granulated sugar 2 eggs 1 teaspoon vanilla 2 1/4 cups old fashioned oats 1 cup semisweet chocolate chips 1. Heat oven to 350 degrees. 2. Combine flour, cocoa, baking soda, and salt in a bowl. In a large bowl, beat butter and both kinds of sugar until creamy, about 3 minutes.Beat in eggs and vanilla. On low speed, beat in four mixture, then stir in oats, and chocolate chips. 3. Dollop 1/4 cupfuls of batter onto prepared baking sheets. Bake cookies at 350 degrees for 17 minutes. Let cool on baking sheets for 5 minutes, then transfer cookies to wire racks to cool completely.

Thursday
| Well today has been a pretty good day. I have actually gotten a few things done. We got up and went to the grocery store, we bought some ham, chicken and pork chops. Ham was on sale and so I am planning on baking it for Sunday dinner and then using it the rest of the week in some other dishes. Shane loves ham but I try not to buy pork a whole lot since it is pretty bad for you. I love to have ham and eggs though!!! The chickens aren't laying well at all lately so I actually had to buy some eggs today, probably the first I've bought in over six months. I used my new grain mill this afternoon and baked some bread. I love my new mill it is so easy to use. Shane is going to buy me a bosch mixer for Christmas and I am so excited, I can't wait till I get it!! It will be the perfect addition to my nutrimill. I got the kids to sleep about 8:30 and then I made some crackers and cleaned up the kitchen. I found the recipe for crackers online and I added some garlic powder and oregano to these, I think they are pretty good. We will see how everyone else likes them tomorrow. |

Bethany's Birthday
| Well today my little girl turned 2!! I can't believe it has been 2 years since she was born. It's unbelievable that my little baby is now about quadrupled in size and is learning so much every day. I think I realized today that birthdays are as much for the parents as for the kids. I was so excited to celebrate for her and remember when I had her. I remember my mom always told us on the day before what she was doing before getting ready to have us(hers were planned c-section). I have been thinking myself about this time 2 years ago!!! It's so amazing how children change your life. I can't imagine what it would be like without them. I thank the Lord for my 2 little ones every day.
I have been trying to get ready for church tomorrow. I have a roast in the crock pot ready to turn on so we can come in from church and our lunch will be waiting on us. Roast is such as good Sunday dinner!! |
